Meat Rabbit Breeds Compared: Weight, Litter Size and Feed Conversion

New Zealand White and Californian rabbits, plus the cross between them, carry almost all commercial rabbit meat production. That is not tradition: their adult size places the efficient slaughter weight inside the window where a rabbit is still building muscle rather than fat. This comparison uses published figures — ARBA weight limits, FAO litter sizes and carcass yields, documented feed conversion, measured heterosis — and says plainly where a breed has no production data at all.

Which meat rabbit breeds actually earn their cage space

Two breeds carry commercial rabbit meat production almost everywhere: the New Zealand White and the Californian. Nearly everything else is a cross of those two, a heritage breed kept for pelt or conservation reasons, or a show animal that will lose you money if you raise fryers from it.

The dominance is documented, not fashionable. FAO records that the New Zealand White was bred from the outset in large meat units in southern California for prolificacy, maternal performance, fast growth and precocious body development that makes it ready for slaughter at 56 days, then spread through western Europe from 1960. The Californian is a synthetic American breed first shown in 1928, created deliberately as a meat animal with very good fur. Penn State Extension puts the same two at the top of its meat list, in that order.

What follows compares the breeds on the numbers that decide whether a herd pays, and states plainly which of those numbers exist in the literature for each breed and which do not.

What actually makes a breed commercially viable

The master variable is adult size, because it sets the slaughter weight. FAO advises slaughtering at 50–60% of the normal adult weight for the breed, the point giving both the best carcass composition and the most efficient use of feed. A 4 kg breed therefore has its optimum near 2.0–2.4 kg liveweight; a 7 kg breed has it at 3.5–4.2 kg.

That matters because of how a rabbit is built. FAO describes bone developing first, then muscle, then fat: in a 4 kg population the skeleton grows fast to about 900 g, muscle gains very quickly up to 2.3–2.6 kg before the curve falls abruptly, and fat deposits rapidly after 2.2 kg. A breed whose window sits inside the muscle phase turns feed into saleable meat; a breed whose window sits beyond it turns feed into fat and frame.

Feed is the dominant running cost. FAO's tables put growing rabbits at 2.62–3.80 kg of feed per kg of gain depending on whether the ration is meal, mash or pellets, and record 3.7–4.1 for Californians from 5 to 12 weeks on pellet diameter alone. A Canadian experiment on Californian, American Chinchilla and New Zealand White stock measured about 3.4 to slaughter at 63 days. The doe side is the other half: Texas A&M Extension is blunt that a fancy-bred doe is unsuitable for year-round meat production, and reports commercial-bred stock as having more vigour, higher fertility, larger litters and meatier fryers than show stock of the same breed name.

Meat rabbit breeds compared, side by side

Read the weights carefully. ARBA's public breed pages publish a single maximum show weight per breed rather than separate senior buck and senior doe ranges, which live in the printed Standard of Perfection. The figures below are those maxima plus FAO adult weights and Penn State mature ranges where they exist; where a breed has no published production data, the entry says so rather than repeating a number invented elsewhere.

Fryer weight at eight weeks is a target, not a breed constant: Texas A&M expects at least 1.8 kg (4 lb) by 8–10 weeks, and FAO records the New Zealand White as ready for slaughter at 56 days. For breeds with no growth data, FAO's 50–60% rule gives the honest substitute — derive the window from adult weight.

Dressing percentage is meaningless without the presentation. In FAO's Belgian comparison at 10–12 weeks the same carcasses yield about seven points more under the old French presentation than ready-to-cook, while an Italian series with the fur on returns 69.2% at 9 weeks rising to 72.1% at 15 weeks. Figures below are overall yield, with ready-to-cook in brackets.

  • New Zealand White — ARBA maximum 5.4 kg (12 lb); FAO adult weight about 4 kg; Penn State mature range 4.1–5.4 kg (9–12 lb). Mean litter at birth 7.5, pooled from 10 references and 13,445 litters. Ready for slaughter at 56 days. Carcass yield 64.6% (57.2% ready-to-cook) at 2.49 kg liveweight, 10–12 weeks. Feed conversion about 3.4 to 63 days in the Canadian trial.
  • Californian — ARBA maximum 4.8 kg (10.5 lb); FAO adult weight 3.6–4 kg; Penn State mature range 3.6–5.0 kg (8–11 lb). Mean litter at birth 7.6. Carcass yield 65.6% (58.4% ready-to-cook) at only 2.13 kg liveweight, the best of any purebred in FAO's table.   • New Zealand White × Californian and commercial hybrids — the commercial hybrid in the same FAO trial reached 2.81 kg liveweight at 66.0% yield (59.4% ready-to-cook), the highest in the table. Direct heterosis on body weight in New Zealand crosses runs 5–10% above the parental mean, with the best crossbred groups gaining about 50 g/day to 63 days at a feed conversion near 3.4.
  • Champagne d'Argent — ARBA maximum 5.4 kg (12 lb); FAO adult weight 4–4.5 kg, credited with high fertility, quick growth, good muscle development and good meat quality. Texas A&M names its bucks, alongside Californian, as sires that raise fryer meat yield on commercial New Zealand White does. No breed-specific litter, feed conversion or dressing figures were found in these sources.
  • American Chinchilla — ARBA maximum 5.4 kg (12 lb); FAO gives the European Grand Chinchilla an average adult weight of 4.5 kg. Chinchilla litter size at birth averages 6.8 across five references, below both commercial breeds. In the Canadian trial it showed unfavourable direct but favourable maternal effects on growth, while Chinchilla × Californian fryers ranked first for commercial carcass yield, 4–8% above every other genetic type tested.
  • Florida White — ARBA maximum 2.7 kg (6 lb), by far the smallest breed here. No published fryer weight, feed conversion or dressing figure was found. FAO's 50–60% rule puts its slaughter window near 1.4–1.6 kg liveweight, and FAO notes that light breeds develop very quickly, make excellent mothers, eat less than medium and large breeds and yield a light, meaty carcass of 1–1.2 kg.
  • Silver Fox — ARBA maximum 5.4 kg (12 lb). No published litter, growth or carcass data was found; treat any quoted fryer weight or dressing percentage as one breeder's result rather than a breed characteristic.
  • Cinnamon — ARBA maximum 5.0 kg (11 lb), recognised in 1972 and listed by ARBA as a commercial breed valued for meat production. No published production figures were found.
  • Palomino — ARBA maximum 5.0 kg (11 lb), established in 1957 in Golden and Lynx varieties and listed by ARBA for meat and fur as well as show. No published production figures were found.
  • Crème d'Argent — ARBA maximum 5.0 kg (11 lb), described by ARBA as one of the rarest breeds, with fewer than 1,000 animals in the United States. No published production figures were found; scarcity, not performance, is the reason to keep it.
  • Flemish Giant — ARBA sets no maximum weight and notes animals often over 9 kg (20 lb); FAO gives a potential adult weight of 7 kg. Highest prolificacy in FAO's table at 8.1 kits at birth. But FAO's 50–60% rule puts its slaughter window at 3.5–4.2 kg, far beyond the 2.3–2.6 kg point at which muscle growth falls away and fat deposition takes over.

Why New Zealand White and Californian dominate worldwide

The New Zealand White is the industry's default doe. FAO describes it as selected for prolificacy, maternal performance, fast growth and precocious body development, with a 4 kg adult weight that lands the efficient slaughter window squarely at commercial fryer size. ARBA notes the white variety overtook the coloured ones partly because an unpigmented pelt is easy to dye. Its documented weakness is on the rail: Texas A&M reports lower carcass dress-out and a lower proportion of meat to bone than some other breeds.

The Californian answers exactly that weakness. Slightly smaller at 3.6–4 kg adult weight, it returned the highest purebred carcass yield in FAO's Belgian table — 65.6%, or 58.4% ready-to-cook — from a liveweight of only 2.13 kg, and its mean litter of 7.6 is marginally above the New Zealand White's. The Canadian experiment found negative maternal effects for the Californian on weight traits from weaning to slaughter, a strong argument for using it as a sire rather than a dam line.

Together they cover both halves of the job: a prolific, milky dam and a sire that adds carcass yield. That complementarity, not any single superlative, is why the pair became the world standard.

The New Zealand White × Californian cross and why it is the commercial standard

Crossing buys measured hybrid vigour. The Canadian experiment on 479 rabbits from Californian, American Chinchilla and New Zealand White stock plus nine crosses found direct heterosis for body weight of 5–10% of the parental mean, concentrated in crosses involving New Zealand. Its best groups — New Zealand does mated to New Zealand or Californian bucks, and Californian × New Zealand or New Zealand × Chinchilla crossbred does mated to New Zealand bucks — led on weight at 35 and 63 days, gained about 50 g a day and converted feed at about 3.4.

Texas A&M Extension turns that into a recommendation any farm can follow: use either commercial New Zealand White purebred does or Californian × New Zealand White crossbred does, because both have outstanding fertility, mothering instinct and milk production, and lift fryer meat yield further by putting purebred Californian or Champagne d'Argent bucks over them. FAO's own data point the same way — the commercial hybrid beat every purebred in the table on carcass yield.

The scheme has to be run deliberately or it collapses within two generations. FAO describes keeping part of the herd, around 20%, bred pure for self-renewal of the female stock while the rest are terminally crossed, plus a three-way version where an AB crossbred doe is mated to a C sire. Terminal means exactly that: nothing from the cross is kept as a replacement, because its performance will not repeat. Holding the pure nucleus, the crossbred does and the fryer weights in one breeding record, in RabbitBreeder or anywhere else, is what makes that repeatable rather than a one-off good year.

Where the heritage breeds still earn their place

No heritage meat breed beats the commercial pair on documented growth and conversion, and most have no published production data at all. They earn their place for three other reasons: genetic conservation, a pelt worth money in its own right, and direct-to-customer marketing where a breed name commands a premium the commodity market will never pay.

American Chinchilla is the strongest case on evidence. Its mean litter at birth of 6.8 sits below both commercial breeds and the Canadian experiment found unfavourable direct effects on growth — but favourable maternal effects, and Chinchilla × Californian fryers took first place for commercial carcass yield by 4–8% over every other group tested. That profile says dam line and pelt breed, not terminal sire.

Champagne d'Argent is the one heritage breed an extension service actively recommends putting to work. FAO credits it with high fertility, quick growth, good muscle development and good meat quality at 4–4.5 kg adult weight, and Texas A&M names its bucks alongside Californians as sires that raise fryer meat yield over commercial New Zealand White does. The silvered pelt is a genuine second income stream.

Silver Fox and Cinnamon are ARBA commercial-type breeds at 5.4 kg and 5.0 kg maximum respectively, and Cinnamon is explicitly listed as valued for meat. Neither has published litter, growth or carcass data in these sources, so any performance claim you meet should be read as one rabbitry's records. If you keep them, keep your own numbers — you will be the evidence base.

Small and rare breeds: Florida White, Palomino, Crème d'Argent

Small is not automatically wrong. FAO describes light breeds of 2.5–3 kg adult weight as developing very quickly and making excellent mothers, eating less than medium and large breeds, and suitable for a light, meaty carcass of 1–1.2 kg — a real niche wherever feed is expensive or the market wants a single-portion rabbit. What small rules out is competing on kilograms of meat per doe per year.

Florida White fits that description in an ARBA rabbitry, with a maximum of 2.7 kg (6 lb), less than half the Flemish Giant's typical adult weight. FAO's 50–60% rule puts its fryer window around 1.4–1.6 kg liveweight, so it will never fill a five-pound fryer order. No published feed conversion or dressing figure for the breed was found, which means its widely repeated reputation for a high meat-to-bone ratio is, in these sources, unverified.

Palomino and Crème d'Argent are both ARBA maximum 5.0 kg (11 lb) breeds of full commercial size listed for meat — Palomino established in 1957 in Golden and Lynx varieties, Crème d'Argent one of the rarest breeds with fewer than 1,000 animals in the United States. Neither has published production data. For the Crème d'Argent that rarity is the point: keeping it is a conservation decision, and the small population also makes replacement stock hard to source.

Flemish Giant: the classic beginner mistake

The logic looks unanswerable to a new breeder: pick the biggest rabbit, get the most meat. ARBA sets no maximum weight for the Flemish Giant and notes animals often exceed 9 kg (20 lb), FAO gives a potential adult weight of 7 kg, and the breed tops FAO's prolificacy table at 8.1 kits at birth, ahead of the New Zealand White's 7.5.

The arithmetic of growth defeats it. FAO's rule puts the efficient slaughter point at 50–60% of adult weight, which for a 7 kg breed means 3.5–4.2 kg liveweight. But muscle gains weight quickly only up to 2.3–2.6 kg, after which the curve falls abruptly, and fat deposits rapidly after 2.2 kg. A Flemish Giant grown to its own correct slaughter weight spends the last and most expensive third of its feed bill past the point where it converts feed into lean meat, and because bone develops first, much of the extra frame is skeleton you cannot sell. Add the larger cage and the longer time to market, and cost per kilogram of saleable meat goes the wrong way.

Where Flemish blood does belong is in someone else's pedigree. FAO says the growth potential of the heavy breeds can be exploited especially in crossbreeding, and that the Flemish Giant could furnish a gene pool for improving growth in other breeds. Texas A&M puts it concretely: mating purebred Flemish Giant, Checkered Giant or commercial ALTEX bucks to New Zealand White does produces faster-gaining terminal crossbred fryers that reach 1.8 kg (4 lb) market size earlier. Use the giant as a terminal sire, not as the herd.

Choose on your own numbers, not on a breed name

Every figure here is a population average produced under someone else's management, and the sources say so. FAO notes that slaughter yields vary greatly between countries simply because carcasses are presented differently, that yield improves with age, and that too much roughage lowers it; feed presentation alone moved conversion from 2.62 to 3.80 within the same tables. Your climate, ration and stockmanship will move your results further than the gap between two respectable breeds.

Texas A&M names three measurements for choosing replacement stock, and they are the right three for judging a breed on your own farm: litter size weaned, total litter weight at 21 days as an indicator of the doe's milk, and fryer weight at 8 weeks. Track mortality between weaning and market against the 10–15% the same source treats as normal. Those figures only mean anything compared like with like — same doe across parities, same season, same ration, same age at weighing.

The rule is simple. If commercial New Zealand White or Californian × New Zealand White stock with production records is available near you, start there and prove your own averages before changing anything. Keep a heritage breed alongside it only for a specific reason — a pelt market, a direct-sale customer base, a conservation commitment — and accept that you will be generating the performance data yourself.
