Raising Rabbits for Meat: The Real Unit Economics

One doe on a semi-intensive rebreeding rhythm weans roughly 47 kits a year and yields about 63 kg (139 lb) of saleable carcass. This article builds that figure line by line — litters, mortality, feed conversion, dressing percentage — then puts a cost on every kilogram and says plainly where the margin goes.

How much meat one doe actually produces in a year

A doe on a semi-intensive rebreeding rhythm weans about 47 kits a year, and those kits reach slaughter at roughly 2.4 kg (5.3 lb) live weight. At a ready-to-cook dressing percentage near 58 percent, that is close to 63 kg (139 lb) of saleable carcass per doe per year, from about 108 kg (238 lb) of live weight sold.

That single figure is the whole business. Breed, cage design and pellet brand matter only through their effect on four numbers: how many kits she weans, how many survive to market, what they weigh, and what fraction of that weight you can sell. Get one wrong by a fifth and annual output moves by a fifth.

The chain below is the model used throughout this article, with every assumption stated so you can substitute your own. The cycle from mating to fryer, counted in days

Rabbit economics run on a calendar, not a season. Gestation is short — around 28 to 33 days depending on breed size — and the doe can be re-mated long before her litter is weaned. That is what makes the species productive, and what makes the maths unforgiving: a doe standing empty for three weeks has lost a measurable slice of the year's output and has eaten throughout.

The commercial reference cycle is 42 days: kindle on day zero, re-mate around day 11, carry 31 days, kindle again on day 42. Divide 365 by 42 and you get 8.7 kindlings a year in theory. Real herds do not, because not every mating takes — FAO's reference table puts kindlings per mating at 67 percent. Six or seven successful kindlings is what a competent semi-intensive unit banks, and FAO gives about seven litters a year for that rhythm.

On the growing side, litters are weaned at 28 to 30 days on a semi-intensive schedule or 42 to 55 days on a slower one, and go to slaughter at 70 to 90 days and 2.3 to 2.5 kg. Published European systems slaughter at 9 to 13 weeks and 2.0 to over 2.6 kg. The result is a rolling pipeline: at any moment a doe has a litter on the floor, a pregnancy in progress and a batch fattening.

Three rebreeding rhythms, and what each one actually yields

The decision that most changes annual output is when you put the doe back to the buck. Three rhythms are recognised, and they are not three points on a straight line: each changes feed intake, mortality and how fast you burn through does.

The comparison below runs all three through the same model — same 9 born alive, same 20 percent pre-weaning loss, same 2.4 kg fryer, same 58 percent dressing — so only the litter count changes. That flatters the intensive column, because pushing the rhythm raises pre-weaning mortality and drives the doe herd's culling rate up with it.

This is the trap in most enthusiastic write-ups: they treat litters per year as the score. What you bank is weaned kits per doe per year, net of the extra feed a hard-worked doe eats and net of the replacements you buy because she wore out faster. Utah State Extension suggests a 35-day interval as a workable middle for non-industrial producers, and for most small operations that is worth more than the extra litter.

Feed conversion is the number that decides whether this works

Feed is the dominant cost, and it is not close. An Italian commercial study found feed made up 66.7 percent of total cost, ahead of reproduction at 7.4 percent, drugs at 4.6 percent and energy at 3.4 percent. A Spanish profit-function analysis in World Rabbit Science found that feeding the fattening kits alone was 26 percent of total cost, and gave feed conversion during fattening the largest negative economic weight of any trait in the model.

The distinction almost every hobby budget gets wrong is which conversion ratio to use. The number that pays your bills is the whole-unit ratio: every kilogram of feed bought divided by every kilogram of live weight sold — including the doe eating 365 days a year whether or not she is raising a litter, the buck, replacements growing out, and feed eaten by kits that died before market. FAO puts well-run French rabbitries at 4 kg of pelleted feed per kilogram of live weight marketed, with the best reaching 3.6, which is 5.9 to 6.7 kg of feed per kilogram of carcass.

Individual intake shows where it goes: a pregnant doe eats 180 to 200 g a day, a lactating doe 350 to 400 g (12 to 14 oz), a fattening rabbit 100 to 150 g while gaining 35 to 40 g. At those rates the doe plus her share of a buck account for roughly 110 kg of the 432 kg this model burns — about a quarter of the feed bill, spent before a single fryer is sold. Feed cost per kilogram is conversion ratio times feed price, so substitute your own: this input varies most between a farm buying by the tonne and a smallholder buying 25 kg bags.

A worked cost model: one doe, one year

Prices below are illustrative and given in euros for consistency. Feed, stock and labour prices vary enormously by region, so substitute your own before drawing conclusions. The physical ratios — litters, mortality, conversion, dressing — travel much better than the money does.

Assumptions: one doe plus her share of a buck at one buck per nine does; 45 fryers sold at 2.4 kg live, giving 108 kg live and 63 kg carcass; feed at €0.35/kg at a whole-unit conversion of 4.0; replacement does bought at €30 with the doe herd culled at 112 percent a year, the general average in FAO's reference table; housing capital of €300 per doe, from Penn State's roughly $6,000 of buildings, cages and handling facilities for a 20-doe unit, written down straight-line over ten years; labour at 8 hours per doe per year costed at €12 an hour.

Replacement is larger than people expect: a culling rate above 100 percent means you replace the entire doe herd, and then some, every year. Raising your own is not free either — a doe reaches breeding age at six to seven months, so you carry her about 130 days past normal slaughter age at roughly 150 g of feed a day, some 20 kg of extra feed plus the fryer sale you gave up.

Labour is the line almost every backyard budget sets to zero. Penn State puts a 20-doe unit at 150 to 200 hours a year, or 7.5 to 10 hours per doe. FAO's task breakdown for 100 does agrees: mating 4 hours a week, nest supervision 3, handling young 2, palpation 1 and hygiene 4 — 14 hours weekly before daily feeding. At 8 hours per doe you produce about 7.9 kg of carcass per hour, roughly seven and a half minutes per kilogram.

What moves the number, and where estimates go wrong

Each line below changes one variable from the base case and holds the rest fixed. Two things stand out: mortality and feed conversion do most of the damage, and neither is visible until the year is over unless you are recording it.

Note the asymmetry in the mortality line. When kits die before weaning the doe's own feed bill does not move — she has already eaten it — so a rise in pre-weaning mortality cuts output while leaving roughly a quarter of the feed cost untouched, and cost per kilogram climbs faster than the animal losses alone suggest. Slaughter weight hides a similar trap: killing earlier improves the fattener's conversion, but FAO's yield tables show dressing percentage rising with age, from 69.2 percent at 9 weeks to 72.1 percent at 15 weeks on one presentation basis. Four classic underestimates account for most failed budgets, and each is a recording problem rather than a knowledge problem: counting pellets for the fryers but not the doe's year-round maintenance, budgeting last year's good year for mortality or none at all, pricing your own labour at nothing, and forgetting replacement does. Where the money comes from, and how the channel sets the price

A doe's yearly output can leave the rabbitry as three quite different products, and which one you choose changes the revenue side of every figure above. Live fryers sold at the farm gate move fastest and need the least equipment, but they earn the least per kilogram, because the buyer takes on the slaughter, the chilling and the risk. Dressed carcasses sold as food earn the most per kilogram, and pay for it with the equipment, the cold chain and the record-keeping that turning an animal into food demands. Breeding stock is a market of its own: an animal with a pedigree and recorded performance behind it is worth several times its meat value, but buyers are few, slow to commit and led by reputation, so a new rabbitry places only a handful of animals a year. Most small units end up mixing all three rather than living off one.

Which of those channels is actually open to you is a legal question rather than an economic one, and the answer is jurisdiction-specific: what a producer may slaughter, and whom they may sell it to, is set locally rather than universally. So is raising rabbits for meat worth it?

It depends almost entirely on whether you cost your own labour and on what you pay for feed. Those two variables decide the answer more than breed, cage system or rebreeding rhythm ever will.

Feeding your own household and not costing your time, the answer is a comfortable yes: one doe delivering 63 kg of carcass a year at a cash cost near €3.83 a kilogram beats most meat you can buy, and two does with a buck put roughly 125 kg (276 lb) on the table, about 2.4 kg a week. Selling live fryers at the farm gate and still not costing your time, the margin is thin but real. Cost your labour at any genuine wage and buy bagged retail feed, and the model does not clear — running more litters will not save it.

What does save it is narrower than most people hope: buying feed in bulk or mixing your own, holding pre-weaning mortality well below 20 percent, running a semi-intensive rhythm, and selling a mix of meat, live animals and documented breeding stock so the highest-value channel takes the animals it can absorb. Scale helps through better feed buying and labour productivity, but it does not change the ratios. Run this model with your own prices before committing capital — the physical ratios here are stable across regions, the money is not.
