Is Rabbit Meat Healthy? Nutrition, Red vs White Meat, and What Rabbit Meat Is Called

Is rabbit meat healthy? The short answer

Raw farmed rabbit supplies roughly 20.1 g of protein and 5.6 g of fat per 100 g (3.5 oz), for 136 kcal. That makes it a genuinely lean, nutrient-dense meat — but it is not the almost-fat-free food it is usually sold as online, and skinless chicken breast is leaner on the same basis.

Where rabbit is genuinely exceptional is vitamin B12: 7.16 µg per 100 g raw, about 34 times the amount in skinless chicken breast and more than four times that of lean beef top round. Roasting concentrates it further, to 8.3 µg per 100 g. Rabbit also comes in lower in cholesterol than chicken breast — 57 mg against 73 mg per 100 g — and lower in sodium than any of the usual comparison meats, at 41 mg.

Two cautions apply to any rabbit nutrition table, including ours. The USDA reference figure for rabbit is a composite of cuts — the whole edible carcass averaged — while chicken breast, pork loin and beef top round are single trimmed cuts, which flatters the single cut. And cooked values are not comparable to raw: roasted rabbit reads 29.1 g protein and 8.05 g fat per 100 g mainly because water has left the meat.

Read as a set, the numbers make an argument most rabbit articles avoid: rabbit does not win the leanness contest. It carries more than twice the fat of skinless chicken breast and about 70% more than lean beef top round, and sits essentially level with lean pork loin. What it wins on is micronutrient density — B12 above all, plus a favourable cholesterol and sodium position — and on iron it lands sensibly between poultry and beef.

The gap narrows sharply if you compare cut to cut. Rabbit loin is very lean: selection-line studies report intramuscular fat around 0.8–1.3 g per 100 g of loin, and wider reviews put loin near 2.9% against roughly 6.3–6.6% in the hind leg, with crude fat across breeds and cuts spanning about 0.4% to 6.6%. A rabbit saddle is closer to chicken breast than the composite figure suggests; a hind leg is not.

Wild rabbit is nutritionally a different animal: 114 kcal, 21.8 g protein and only 2.32 g fat per 100 g raw, with more iron at 3.2 mg. A source that calls rabbit ultra-lean without saying which rabbit is usually quoting wild game and applying it to a farmed fryer.

Is rabbit red meat or white meat?

The scientific answer turns on myoglobin, the oxygen-storing pigment in muscle. Meat is red because it is rich in myoglobin, not because of how it is cooked, how fatty it is or which counter it is sold from. Rabbit muscle is low in myoglobin and correspondingly pale: measured lightness across breeds spans roughly L* 41.8 to 65.7, which places rabbit visually with poultry rather than beef.

The regulatory answer is less tidy, and this is where most articles go wrong by picking whichever definition suits them. The IARC monograph that classified red meat as probably carcinogenic defines it as fresh unprocessed mammalian muscle meat, giving beef, veal, pork, lamb, mutton, horse and goat as examples. A rabbit is a mammal, so the wording would take it in — but rabbit appears nowhere in that monograph, and none of the epidemiology behind the classification studied rabbit. Applying that risk finding to rabbit is an extrapolation, not a citation.

Legislators in both major markets have simply declined to file rabbit under either heading. In the United States, Congress never brought rabbit under the Federal Meat Inspection Act, which covers swine, cattle, sheep and goats, nor under the Poultry Products Inspection Act, which covers chickens, turkeys, ducks, geese, guineas, ratites and squab; rabbit inspection is therefore voluntary, under the Agricultural Marketing Act. In the European Union, Regulation (EC) No 853/2004 creates a separate legal category of lagomorphs — rabbits, hares and rodents — then handles them in Annex III Section II, headed 'Meat from poultry and lagomorphs', so rabbit is processed under the same hygiene chapter as chicken.

The honest answer: pale, low-myoglobin flesh that behaves like white meat in the kitchen, from an animal that is taxonomically red-meat material, sold under rules that group it with poultry. If you are asking for dietary reasons, the meaningful facts are in the table above, not in the label.

What rabbit meat is called: fryer, roaster and the chart everybody copies wrong

Rabbit meat is called rabbit. English built separate culinary nouns for the animals the Normans ate — cattle became beef, pig became pork, sheep became mutton — but never did so for rabbit, and no USDA document uses anything else. What changes on a label is the class, and the classes are processing grades tied to age and carcass weight, not marketing adjectives.

The definitions come from the USDA Agricultural Marketing Service standard, AMS §§70.300–70.302, and one detail matters more than any other: every weight in that standard is a ready-to-cook carcass weight, not the live weight of the animal. Many published tables silently treat one as the other.

Here is the correction the rest of the web still owes its readers. Charts circulate showing three tiers — fryer, then roaster in a middle band, then stewer above about 8 lb live weight. There is no such three-tier split in the federal standard. AMS §70.302 puts roaster, stewer and mature rabbit together in a single class under a single definition, and the FSIS consumer guidance does not use 'stewer' as a label class at all. 'Stewer' is a synonym for an older rabbit, not a separate weight grade. The two USDA documents do not even agree on the age: the AMS standard says usually 6 months or older, the FSIS page says over 8 months.

Both inspection and grading are voluntary. Rabbit may be graded only if FSIS or an accepted state system has inspected and passed it; processors outside the scheme fall to the FDA, which also governs interstate shipment.

What does rabbit meat taste like?

Farmed fryer rabbit is mild, faintly sweet and much closer to chicken thigh than to chicken breast, with a firmer, drier bite. It is not gamey. The dryness is structural rather than a cooking failure: the loin holds very little intramuscular fat, so there is almost no melting fat to carry flavour or to forgive thirty seconds of overcooking.

The aroma has been characterised in detail. More than 75 volatile compounds have been identified in rabbit meat, with hexanal, nonanal, pentanal, hexanoic acid and 2-pentyl furan repeatedly named as carrying its particular odour, often described as a grassy note. Rabbit fat also has an unusual fatty-acid profile — FAO figures give linoleic acid at 17.9% and linolenic at 6.5%, with less stearic and oleic acid than other species — part of why the flavour reads clean and slightly green rather than rich.

Wild rabbit and hare taste markedly stronger, and the reason is visible in the composition: 2.32 g fat per 100 g against 5.6 g for farmed, from an older animal whose muscles have done far more work. If somebody tells you rabbit is gamey, ask which rabbit they ate.

The practical consequence is that a fryer loin wants fast, hot, brief cooking, while a mature roaster genuinely does want braising or stewing — precisely what the USDA class description says. USDA advises cooking rabbit to an internal temperature of at least 71°C (160°F), measured with a thermometer.

Eating quality is decided on the farm, not at the stove

For anyone actually producing rabbit, this is the section that matters: almost everything a customer notices about texture and flavour was settled before the carcass reached the chiller. The published evidence points at four levers, and all four are yours.

Dressing percentage moves with age too, and not in a straight line. Mississippi State Extension data give New Zealand rabbits 55.9% at 8 weeks, 59.2% at 13 weeks and 58.2% at maturity, with Dutch rabbits higher at every point — 60.3%, 63.3% and 62.8%. Yield climbs towards maturity then slips back, which is why the window for a fryer is narrow and holding animals another fortnight is rarely free.

All of that is a record-keeping problem before it is a husbandry problem. You cannot tune slaughter age against carcass weight, or tell whether a ration change actually improved yield, unless kindling dates, weaning weights, feed batches and carcass weights are recorded per litter and stay comparable across a season. Rabbit starvation and protein poisoning, accurately

'Rabbit starvation' is a real phenomenon and a badly named one. It describes what happens to someone whose diet is almost entirely lean protein, with too little fat and carbohydrate to cover energy needs. It is a fat-deficiency syndrome of a whole diet — not a toxin in rabbit meat, and nothing to do with rabbit beyond the fact that lean winter game was historically what people were reduced to eating alone.

The physiology is a ceiling on nitrogen disposal. Reviewing high protein intakes, Bilsborough and Mann note that the gut absorbs amino acids at roughly 1.3–10 g per hour and that the liver must deaminate whatever arrives and convert the nitrogen to urea. They put a practical maximum near 2–2.5 g of protein per kilogram of body weight per day, or about 25% of energy intake, and identify intakes above roughly 35% of total energy as the region where hepatic urea capacity may be exceeded.

Measured against that, farmed rabbit is a poor candidate for causing the problem. At 5.6 g of fat and 20.1 g of protein per 100 g raw, about 37% of the calories in farmed rabbit come from fat, and the roasted figures give almost the same share. Wild rabbit is the leaner case at 2.32 g of fat per 100 g, around 18% of calories from fat — closer to the historical scenario, and still a hazard only for someone eating that single food and nothing else for weeks.

In ordinary use the question answers itself: nobody assembles a diet from one meat. Anyone planning an unusual or restricted way of eating should take that to a qualified clinician rather than a farm blog.
